COOKING INSTRUCTIONS:

1. Cook the Noodles: Boil rice noodles according to package instructions. Drain and set aside.
2. Cook the Chicken: Heat vegetable oil in a large skillet or wok over medium-high heat. Add chicken slices and stir-fry until golden and fully cooked (5–7 minutes). Remove and set aside.
3. Sauté the Veggies: In the same pan, add bell peppers and snap peas or broccoli. Stir-fry for about 3–4 minutes until they’re bright and just tender.
4. Whip Up the Sauce: In a bowl, whisk together peanut butter, soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger until smooth.
